Peanut Butter Protein Balls

I’ve been messing around with my protein ball recipe and honestly this one blew it out of the water! I had original inspiration from about 500 different Pinterest recipes and just kind of winged it when I finally got everything together in the kitchen.

A couple of notes:
1. You can swap out the Vegan Vanilla Shakeology for coconut flour, almond flour (although it doesn’t hold together very well with this), a different vegan protein that you have on hand, etc. you won’t get the same protein content or nutritional value but these all still work for the purpose of making a snack that you can whip up in literally 5 minutes.
2. Melt your peanut butter!
3. You can add chocolate chips if you want, I just didn’t have any on hand. There is also no limit to how many chocolate chips you can add that is up to you and your chocoalte chip desires. This will alter and decrease the nutritional value though. So, maybe keep that in mind.

INGREDIENTS
2/3 Cup Creamy Peanut Butter (softened or melted)
1/2 Cup Vegan Vanilla Shakeology
1/4 Cup + 1 TBSP Honey
1/4 TSP Pure Vanilla Extract
1/4 Cup Old Fashioned Rolled Oats
*Optional Semi-Sweet Chocolate Chips*

DIRECTIONS
In medium bowl mix together melted peanut butter, honey, and vanilla extract thoroughly. Mix in Shakeology until smooth and then add in the oats and chocolate chips. Use a regular spoon to scoop out and roll into balls that you will lay out on a cookie sheet to cool for about 30 minutes before enjoying. If storing keep in a closed container and can store in fridge for about 3-5 days if they even last that long.
