Often time referred to as “protein balls” these delicious snacks are one of my favs! I don’t personally classify these as “healthy” because they are really high in fat and sugar, but they are a healthier option to help curb that sweet tooth. I didn’t have any chocolate chips on hand, and I wasn’t going to run to the grocery store for any because of COVID-19 and being on quarantine. So, if you have chocolate chips or even some mini m&ms feel free to throw some of those in there as well!
What you need:
2/3 cup of smooth peanut butter
1 cup rolled oats
2 tbsp honey
*unsweetened coconut flakes (optional)
Mix the peanut butter, rolled oats, honey, and chocolate chips (if you have them) in a medium bowl. Refrigerate for 15 minutes so that they are easier to roll. Get about 2 tbsp of mix and roll into balls- I was able to make 9 with this amount of ingredients. For the coconut flakes you will just roll the balls in the coconut flakes OR sprinkle on top like I did since it was an after thought. Refrigerate to enjoy later or enjoy right away.
